When I’m stressed out I go for food (or bored or tired or whatever). This is super satisfying soup I eat usually in the afternoon. For added flavor, I buy soup bones in throw in. It really needs about an hour to cook down. I make a big pot then put it in individual size container  and put some in the fridge and some in the freezer. It heats up quick and fills you up but not out!

Ingredients:

One package pre-washed, chopped  “Broccoli Slaw” (Broccoli, Red Cabbage, and Carrots)
1 Bunch Celery, chopped (or pre-chopped which is my preference!)
4 cans Whole Diced Tomatoes
4 cans Water
One package of Dry Onion Soup Mix
2 Tbls. Garlic (prepared chopped garlic — yup, lots of garlic!)
1 Tbl. Oregano
1 Tbl. Dried Basil
1 Tbl. Dried Parsley
2 Bay Leaves
(Optional: Soup Bones With No Meat For Added Flavor)
Salt And Pepper To Taste

Bring to a boil for at least 10 minutes.  Lower heat and simmer until desired consistency of vegetables is reached.  You may increase or decrease water in pot while cooking to get the desired thickness of soup.

This soup may be eaten in virtually unlimited amounts before, after, and between meals as well as at bedtime.

If you don’t mind a few extra calories, you can add shredded Parmesan Cheese as a topping for even extra flavor.  It melts over top and is quite yummy for vegetable soup!
